As the world transitions to sustainable plant-based diets, deficiency in B12, which can cause dangerous health effects, will rise. Finding ways to fortify food with B12 may help to keep people, as well as the planet, healthy. This video features collaborative research focused on the importance of Vitamin B12 to human health and exploring how dietary deficiency can be addressed by the incorporation of Vitamin B12 into edible plants. Some of this research has been funded by the Biotechnology and Biological Sciences Research Council (BBSRC), part of UKRI, through a Follow-on Fund grant to the John Innes Centre, Quadram Institute Bioscience, and LettUs Grow.
